You could probably put a voltage divider across the speaker.

This is a very simple amp, if you pulled a line out off the preamp, you would lose the tonal contribution of the speaker and power stage.  The speaker is a major part of your tone.

best way to record is with a mic pointed at the speaker.

im thinking more for vocal or other preamp - not for a guitar line out

Well you could stick a 0.1uF DC blocking cap on the cathode of the first stage, followed by say 100k to ground (no volume control), or on the second stage cathode (volume control), or just put a 10k (o.n.o.) in series with the bottom end of the 220k 6V6 grid resistor and take your signal from there.

The main disadvantage of just putting an attenuator across the speaker is that it also acts as a microphone, and if the amp happens to be sitting alongside another guitar amp it will pick it up as well.  You can get it to work quite well, you just have to be a bit careful how you use it.
