As mentioned in other posts I have 2 of these. How would I wire both to drive  single speaker? Or 2 speakers maybe?

Will it sound any different if I connect each output to its own speaker? This would be easier as both are already built into complete modules. I could then have mono  or stereo input options. Heres the enclosure with 4ohm car speakers currently fed with an LM386 amp

Since you have 2 amps and 2 speakers, connect one speaker to each amp.
If you have a stereo program (Stereo MP3 from Phone or Player) connect them to a stereo input jack and use the proper stereo cable; if for mono program (say Guitar, Bass, keyboard, etc.) connect both inputs together to a single input jack.
